I did a cooking dinner party last night - same Italian menu as I did for the event in December - but after working all day to restore my crashed computer, I didn't have a ton of energy and I forgot to take my camera to photograph anything which I keep saying I'm going to do. At any rate, I arrived home at about 10:00pm after a long day and ate the leftover spaghetti carbonara while walking around the house putting away my food and cookware. Even cold out of the container it was delicious!
Spaghetti Carbonara
First saute diced pancetta until crispy and golden brown, then blot up a little of the fat with a paper towel (easier than draining the pan). Add some butter and minced garlic and saute for a minute, then add heavy cream and pepper and stir until bubbly. Add grate Parmigiano Reggiano cheese and let melt into the sauce, then toss with cooked spaghetti and quickly stir in egg yolks and minced parsley. Serve immediately - or eat cold before bed!
