I taught a Thai dinner cooking class in my kitchen last night, one of my favorites because of how surprisingly easy it is to make Thai food. Many people are intimidated by ethnic cuisines, not understanding that by using just a few of the key ingredients the typify that cuisine, you can achieve a relatively simple approximation of a classic dish. In the case of Thai food, those ingredients includes coconut, garlic, ginger, chiles, basil, lemongrass and curry - all of which are available at most grocery stores. Here's the dinner we made:

Coconut Soup with Chicken and Shitake Mushrooms
Thai Green Curry Chicken with Basil
Jasmine Rice
Sesame Stir Fried Sugar Snap Peas with Garlic, Ginger and Cashews
Mango Sorbet with Caramelized Pineapple
