I was back in the kitchen yesterday cooking for my photo shoot for an upcoming article about sandwiches. Given my hectic schedule yesterday of running errands and caring for parents, I was thrilled to have this Italian BLT to wolf down on my way out the door.

I had planned to make lamb shanks for dinner but didn't arrive home until after 6pm, so settled with something simple from the freezer.

Caesar Salad with Romaine and Arugula
Baked Potato with Butter, Salt and Pepper
Pan Seared and Oven-Finished Buffalo Tenderloin (which I never ate because I was so full from the salad and the potato)
