The most abundant crop in the winter harvest share from my farm, understandably, is the humble potato. At this point they threaten to overtake my laundry room and garage! During the warm months I rarely eat potatoes, and I have to work my way back into them in the winter. Last night it was the perfect comfort food to accompany our dinner.
Roast Chicken
Although I usually roast my own chickens, I was in a hurry and bought this one from Whole Foods for my daughter to eat before she went to her night class. She forgot and ate something else so my husband and I each ate a breast.
Smashed Yukon Gold Potatoes
When I'm making a creamy mashed potato, I use a potato ricer to get that fine creamy texture without making the potatoes gluey. But I wanted a more rustic dish last night, so cooked the cubed potatoes with skins on then gently smashed them with a potato masher along with some butter, buttermilk, salt and pepper. They were so yummy I'm going to have them for breakfast today!
Sugar Snap Peas
